3.1.2. Infrastructure design

 The design of the infrastructure must have the appropriate measures for the correct location of the areas, with the aim of preventing physical, chemical or microbiological contamination of the fresh products.

The infrastructure of the packing area consists of accesses, packaging lines (washing, selection, sorting and packaging itself), cold rooms, warehouses, sanitary facilities, dining rooms and other facilities that the company requires.

It should be evident that there are no temporary repairs with unauthorized materials (for example, wood, ropes, cardboard, adhesive tape) that could compromise the food safety of the process and the product, have preventive routine with cleaning procedures or create conditions for the development of pests.
