Axis IV: Eleven Rivers System Based in HACCP

In axes, I, II and III, considered as pre-requisite, the minimum technical elements and preventive actions the participating grower must document and implement within the Eleven Rivers Certification Scheme are expressed.

Once risks are evaluated, control systems are established and pre-requisite axes are implemented, technical personnel will proceed to apply the tools based on system of Hazard Analysis and Critical Control Points system, (HACCP), described in this section.

The participating company must demonstrate a level of performance higher than 85% on the pre-requisite axes to approve the HACCP System.

Axis IV is based on the provisions provided by the National Advisory Committee on Microbiological Criteria for Food (NACMCF) and the HACCP Principles and guidelines of the Codex Alimentarius Commission (Food Code).
